+You can edit the style of the map by either replacing or editing /home/renderer/src/openstreetmap-carto/mapnik.xml.

+ docker cp mapnik.xml /home/renderer/src/openstreetmap-carto/

+ docker exec -t -i <name of your container> /bin/bash
+ apt install vi
+ vi /home/renderer/src/openstreetmap-carto/mapnik.xml

+Once edited, save the file, then clear the tile cache:
